Gluten Intolerance Introduction

The words "Gluten Free" sound so difficult to swallow.  Like really, you mean no bread, muffins, cupcakes, birthday cake, hoagies, and so on.  That is not completely true, there are alternatives.  But for now, the big question is: how can I feel better?  Are you having consistent digestive problems?  nausea? diarrhea? constipation? gas?  bloating? Do these issues come and go, but never go away for very long?  Are you trying to manage your problems with over-the-counter or prescribed medications?  Often, simply "Going Gluten-Free" for three to seven days can give your your answer of whether gluten is your issue.

So often, when starting something new, it is difficult to know where to start. Keep it simple, stress does not do a digestive system well.  Raw foods contain their own digestive enzymes, so lots of salad and smoothies are easy for a taxed digestive system to break down.  This is a simple five day menu to get you started. Don't get too hungry and plan with snacks if needed:  air popped pop corn and fruit are wonderful.   If you have questions, fill out the comment section at the bottom of the Shop page. 


When we suffer from gluten intolerance our body is normally also suffering from nutritional deficiency, due to the fact that our digestive system has been struggling.  As a part of our daily lunch and dinner, it is important to incorporate either a salad or a raw veggie plate.  Either as a snack or in place of breakfast or lunch, a quart of smoothie including leafy green veggies is very important.  Raw vegetables naturally have enzymes that help us digest our food and allow our bodies to use the nutrients.  


Breakfast

Fruit with drizzle of yogurt and honey and GF granola

2 eggs, style of choice, cooked in coconut oil with salad, Herbed salad dressing

Refrigerator Oats: Mason Jar: 1/2 cup each, GF oats, Coconut milk, Yogurt, fruit - set in refrigerator overnight.   


Basic or Kicking Smoothie 

Lunch 

Black Bean Hummus with celery, carrots and tortilla chips, purchase hummus or use recipe on Recipes page
Beef stir-fly with snow peas and Salad

Tomato-rice soup and Salad

Taco platter - cream cheese spread or chevre spread on platter with chicken or ground meat, salsa, raw or regular cheddar and topped with lettuce served with corn tortilla chips

Salad with grilled chicken and Herbed Salad Dressing on Recipes page

Dinner

Simple chicken dinner with Autumn potatoes and large salad on Recipes page

Chicken Curry also on Recipe page and Salad

Roast Beef or steak and rice with steamed or raw broccoli and Salad

Brown pasta rice or corn pasta with a marinara or meat sauce, (only meatballs because they usually have breadcrumbs in them) and a Salad

Baked fish and quinoa (easy to make-follow directions) with dill dip and Salad

Gluten-free information

When shopping, read ingredients and check for wheat, barley, rye, spelt, kamut, which all contain gluten.  Also be aware to only get gluten-free oats, because they are commonly processed with wheat.  You may notice a marked difference in three days if gluten is your issue, although occasionally, people are not sure for up to two weeks.  If you still do not have your answer, continue till you are sure.  You do not have to strictly adhere to this menu; you can use your imagination. But do not eat products containing gluten or you will not be able to determine if gluten is your problem.  

Helpful hints:  When using gluten-free bread, it is usually better when toasted.  
                     When buying oats, look for gluten-free oats.  
                     Keep a gluten-free snack or granola bar in your  bag or car in case you are stuck.  
                     Many restaurants have gluten-free menus, ask.  
                     Consider taking Life Long Vitality Vitamins, a food based vitamin, since many gluten intolerant people are lacking in nutrients due to their ability to absorb nutrients has usually been deficient for a long time.
